Johanna’s sidra cherry is picked, floated and then fermented whole for 16 hours. Then pulped and placed into open stainless steel tanks for 24hrs. Following these two fermentation stages the coffee is fully washed in an eco-mill that uses a fraction of the water typically required in washed processing.
